Russell & George, one of Australia’s most innovative architect and design firms continue to prove their ilk as a designer of choice for the most dynamic business outfits around the country.

Bill’s Bar in Collingwood, from the acclaimed hospitality team behind the Huxtable Restaurant and Bar and Huxtaburger premium burger joint, is one of the latest projects completed by the firm.

Hidden within the US diner-inspired Huxtaburger premises on Smith Street, Russell & George have ensured Bill’s Bar exudes more than a hint of speakeasy.  With a covert entrance leading from Huxtaburger into the bar, and one-way mirrors at the front, the sense of fun is distinctively understated, but makes an unmistakeable impression.
Personable and mellow, the Bill’s Bar interior is a sublime contrast to the lively and vibrant feel of Huxtaburger, and more reminiscent of the relaxed, contemporary Huxtable’s fit-out (both also by Russell & George).

Playing off the black and white diamond tiled walls in Huxtaburger, the Bill’s Bar space is highlighted by a striking full-wall wine rack, a hand-crafted wooden grid, where wine bottles are nestled in stunning diamond-shaped shelving. The bar itself sees a repeat of the diamond motif, as it draws focus to the spirit wall, home to a world-class line-up.

Bill’s Bar is all about fabulous drinks and relaxing in great company. The spirit of the venue is ‘premium but affordable’, and is reflected in the sense of pared-back luxe that is the décor; tan and mint green leather and natural wood finishes glowing under gentle, low lighting.

“We’re such fans of what Daniel Wilson, Dante Ruaine and Jeff Wong have created with their eateries, and it was a delight to work with them again on Bill’s Bar” said Byron George of Russell & George.
