The Morrison Bar and Oyster Room sees the reinvention of the Brooklyn Hotel into the landmark CBD venue that it once was. Bridging the ‘old’ Brooklyn and the ‘new’ Grosvenor Place the venue both strips back the previous layers of the Brooklyn building to expose its raw heritage whilst adding the technically intricate and beautifully contemporary terrace bar around the new open air courtyard, all of which radiates around the grand Grosvenor Place columns.

The Oyster room and restaurant sees itself drawing from the historical vernacular of the old building and its industrial roots; raw steel, concrete and masonry are cut back whilst the layers of paint, render and old timber panel work give nod to its days as the retailer of ‘Brooklyn Overalls’. The space loosely constructed around the old buildings internal ‘precincts’; the front stoop where one can watch the heavy footpath traffic while reclining on a park bench under a tree, the kitchen dining which allows groups to eat at robust communal tables whilst overseeing the head chef at work at the oyster bar, and the pantry area where one can catch a bite amongst the hustle of wait staff, kitchen shelves and charcuterie.

The boundary of service and dining becomes increasing blurred and allows the diner to feel ‘at home’ in what could be their own factory loft, or if your prefer take a seat at the bar and just make it your regular spot.

Step out past the open air courtyard to the rear terrace and you are surrounded by the vertical view of Grosvenor Place and the theatre of the Grosvenor lobby, surrounded by the meticulously detailed glass, steel and brass terrace structure. This area is where one can dine in style and privacy while enjoying the sophistication of the black banquette and brass detailing, or just relax by the fireplace…

The Morrison is both a lavish play on its industrial heritage and a modern and sophisticated piece of architecture.

The Oyster bar is a space in which once can get lost in the million forgotten memories of the old Rocks area and the fantasy of the CBD. The grunge of streetscape imagery combine with meticulously specified mid-century furniture to create a materially rich and visually spectacular experience.
