Walls cascading with strawberries…ceilings created from bales of
hay….and furniture crafted from
retired road signs….”Greenhouse” is a unique and exciting
new bar made entirely from
recycled and recyclable materials.
Like an oasis in the middle of busy St.
George’s Terrace, “Greenhouse” is an
Australian first in sustainable design.
The “Greenhouse” roof-top garden not only
offers a perfectly peaceful place to sit and
eat, but also provides many of the herbs,
vegetables, fruits and honey (from an actual
bee-hive) that are used in the kitchen to
create the fresh food.
Nearby, worms are busy turning the kitchen
scraps into rich compost – to use on the
garden!
The floor of the garden is lined with
recycled car tyres. 4,000 terracotta plant pots, filled with
strawberries, form the outside walls.
Chairs are literally made from old road
signs, tables from man-hole covers and fire hydrants, and lamp shades are formed from
fencing wire.
The supporting structure of “Greenhouse” is
a 100% recyclable steel frame which is fast
and easy to assemble.

Wall and roof cavities are filled with
420 fi re-safe straw bales which insulate
the building, keeping it at a stable
temperature without the need for large
cooling or heating systems.
Designer Joost Bakker says the aim of
Greenhouse is to lead by example.
“Nobody ever convinced anyone of anything
by shouting it at them. We hope we can
quietly share some of what we have learned,
and let the results speak for themselves.”

style combines industrial
elements with plant-based
displays, using the colour
of fresh fl owers and foliage
for dramatic effect.
He travels to commercial
restaurants, bars and
private clients creating
his unique style of prolific
installations.
Joost chose Perth’s St.
George’s Terrace location
for “Greenhouse”, after it
achieved great success as
a temporary installation
in Melbourne’s Federation
Square.
